In the cellar the grapes go through a carbonic maceration for 15 hours, (under the pressure of carbonic gas which produces light wines with good color and soft fruit).  The alcoholic fermentation lasts for 10 days in stainless steel at a controlled temperature of 20°C.  The wine is then refined in stainless steel tanks for about 5 months, then cold stabilized,  filtered, and bottled and left to rest for another 3 months before release. This Verdeyo is absolutely delicious with a fresh soft taste of citrus fruits, green apples, kiwi and honey it's a perfect partner with fish, fried pork, salads, light cheeses and of course, tapas....or just to enjoy as a great sipping wine.  Serve chilled.
