Roble is made from 100% Tempranillo grapes, harvested in the first week of October.  In the cellar they are destemmed and macerated on the skins for 10 days at a controlled temperature, after which the skins are removed and the juice is  fermented in stainless steel for 8 days at a temperature between 22 - 24°C.  The wine is then decanted and  refined for 4 months in 40% French and 60% American oak barrels, ranging in age from new to three years old. After bottling the wine is left to rest for an additional 6 months.  Roble has a beautiful red robe with an exraordinary richness that's velvety smooth making it a fantastic partner with grilled or roasted red meats.  Serve at room temperature.
