Soave Classico


The grapes are harvested in the beginning of October, then soft pressed and cold macerated for 12 hours at 5-7°C and decanted for 2 days.  Fermentation lasts for approximately 3 weeks followed by maturation on light yeasts.  The wine is then cold stabilized and filtered then bottled where it rests for 3 months before release.  This is a beautiful pale straw yellow wine that’s lightly aromatic, fresh and delicate with notes of vine flowers, cherry blossoms and elderflowers.  Pairs well with hors d’oeuvres, baked and grilled fish, white meats, risottos, or fresh and moderately seasoned cheeses.  Serve chilled.
