Custoza Superiore

            The lovely Custoza is made from several grape varietals, the greatest portion being Garganega and Trebbiano Toscana that are harvested in the first 10 days of October followed by cryo-maceration and soft pressing.  4-5% of the Garganega must is fermented and matured on the lees for about 4 months, while the rest of the grapes ferment in contact with their lees in stainless steel until May.  The wine is then bottled and left to mature for at least 6 months.  This is a delicious aromatic wine that has a pale straw color with greenish highlights and aromas of wild flowers and exotic fruits  Pairs well with sushi, sashimi & raw fish, and great with both white and red meats as well as glazed duck.

Serve chilled.
