Bardolino is made from Corvina, Rondinella and Sangiovese grapes harvested in late September/early October, crushed and destemmed followed by a long delicate fermentation, on the skins, in temperature controlled stainless steel tanks.  After “racking off” (draining the clear wine off its lees), the wine goes thru the malolactic fermentation then refined in stainless steel for 2-3 months, bottled and left to rest for an additional 4 months.  This is a brilliant, ruby red wine that has delicately fragrant berry-fruit aromas with hints of cinnamon and cloves.  It is a dry, rounded, fresh and easy drinking wine that pairs well with antipasti, light snacks, white meats, fish, and pasta dishes with light sauces and should be served at room temperature.
