Amarone della Valpolicella Classico



The incredible Amarone is made from Corvina and Rondinella grapes, hand harvested around mid October after the grapes have just started to dry on the vine, then left to continue drying in crates in a special drying area at natural winter temperatures for 90-120/130 days. The grapes are then gently crushed and destemmed and slowly fermented in small stainless steel vats, with long maceration on the skins.  The wine spends at least 24 months in 20-30 hectoliter French oak barrels, followed by a minimum of 8 months in the bottle.   This wine is extremely elegant, well-balanced and velvety, but at the same time robust, complex and generously full-bodied. It has a deep ruby red color with garnet highlights and aromas of cherries, plums and liquorice with spices that hint of pepper and cinnamon. It’s a wine that pairs well with roast game or braised meats, barbecued ribs, steaks, and sausages dishes as well as all types of ethnic foods…also delicious on its own as a sipping wine outside the context of a meal.
