Salice Salentino

Salice Salentino is made from Negroamaro and Malvasia Nera grapes and is the most prominent of Salento’s DOC’s due to it’s consistent rich and robust quality that mellows with age. After the harvest the grapes are fermented in stainless steel tanks with frequent delestage.  Spontaneous malolactic fermentation follows; the process that gives wine softer, more pleasant characteristics.  The wine is then aged for ten months in stainless steel with an additional two months in the bottle before release.  This is a classic wine with fragrant fruit flavors, soft tannins and great body that pairs well with roasted white and red meats, poultry, hard cheeses and salami.  Serve at room temperature.
