Castel del Monte Riserva

The grapes for this lovely Riserva are harvested in late October/early November and fermented in stainless steel tanks with frequent delestage.  When the malolactic fermentation, that gives the wine softer, more pleasant characteristics, is completed, the wine is refined in stainless steel tanks for 8 months followed by 12 months aging in 60HL French Allier casks with an additional 2 months in the bottle before release.  This is a classic Riserva that has a deep ruby red color, intense aromas of fruits and berries and a round, full taste that’s well balanced with great body.  It pairs well with red meat dishes, roasts, games mature cheeses and salami.  It’s also excellent as an after dinner drink.  Serve at room temperature.
