Gemma Pinot Nero

The grapes are hand harvested at the end of August followed by cold maceration on the skins at a controlled temperature of 25-27°C with daily delestage  (the process of removing the seeds from the grapes which cause harsh tannins (*see detailed explanation on the tech sheet).  The wine is refined in stainless steel tanks then in large cherrywood barrels, after which it rests in the bottle for one year before release.  This noble wine is beautifully balanced, earthy, rich and elegant with a bouquet of blackberries and raspberries.  It pairs well with many varied dishes; also a perfect partner to turkey and the many different dishes on a holiday table.  Serve at room temperature.
