Terre Valse Cerasuolo Mont. d’Abruzzo

After the harvest the grapes are destemmed and soft pressed and left to soak on the skins at 0°C for 24 hours after which the skins are removed and a special selection of indigenous yeasts are added and the must is left to ferment at a controlled temperature of 15-20°C.  The wine is then racked off its lees into stainless steel tanks where it’s left to refine until early Spring.  After bottling, the wine is left to rest for two months before release This lovely rosè has a brilliantly clear cherry color with aromas that hint of raspberries, small red fruits and wildflowers and a taste that’s dry & fresh with berry fruit flavors. Cerasuolo is great with both fried and spicy foods such as crispy, classic southern fried chicken, chicken with salsa verdi, smoky shrimp and grilled fish with flavorful sauces, spicy Asian inspired dishes and flavorful vegetarian dishes.  It’s also delightful as a sipping wine; should be served slightly chilled.
