Abruzzo Pecorino DOC

After the harvest the grapes are crushed and have a short period of crio-maceration (6-7 hours) then soft pressed, and the juice is fermented under a controlled temperature.  The wine is refined on its lees, with periodic remontaggio, in stainless steel tanks for 5-6 months, followed by a minimum of 2 months in the bottle.  This is a unique pale straw colored wine with greenish reflections and aromas of yellow fruits, evolving into aromas of wildflowers.  The taste is fresh with rich flavors and a complex fruity structure.  Pairs well with seafood, light pasta dishes and light meats; delightful also as a sipping wine.  Serve chilled.
